All wines contain naturally occurring sulfites but over 95% of wines have extra sulphur (SO2) added to wine as a preservative to lock oxygen out of the wine and keep it in a pristine condition.

Unfortunately many people (the FDA estimates 1 in 100) have or develop over time an inability to process sulfites effectively causing allergy-like symptoms such as rashes or hot flushes, headaches, restricted breath and Irritable Bowel Syndrome (IBS).  Often people don't even realise they are suffering from this allergy and will say “I just cant handle wine the same as I used to”.  

The body’s natural defence system combats these sulfites in a variety of ways, one of which is to release histamines and, as in most allergic reactions, it is the histamines that can cause allergy-like symptoms.  These symptoms are often worse for those who suffer from asthma.

And, just as all wines are not equal, UBfree recognises that all wine drops are not equal.  Did you know that some red wines have 70% less preservative than some white wines? Reds typically contains lower sulfite levels because of their higher tannin concentrations. Tannins are polyphenols from the stems, skin, and seeds of grapes, and are naturally-occurring preservatives, which reduces the need for adding sulfites.
